Wow, seven weeks have gone by already. all relative again, now it seems fast but few weeks ago it was dragging. I lost 2 pounds this week. Not great but still a loss and I am down to 247 and closer to my target weight of 225 by the end of the year. I thought I would lose more since I am working out hard and being strict with the Paleo diet. In fact, I bought a dehydrator and have been making beef and chicken jerky. I’ve been experimenting with different rubs and marinades and some have been ok, some are great. The chicken jerky with a chili rub is the best. In fact, my trainer tried it and wants to package it and sell it. He gave out samples and his clients loved it. Just 3 ozs. pack a walloping 20 grams of protein and no fat. It is great for a light lunch or a snack after a workout.
I also have been playing around with a Paleo Krunch bar made with almond meal, coconut, pumpkin seeds, safflower seeds, almonds, coconut oil, vanilla, cinnamon and it came out really good. So I may have a cottage business going when I get back from my trip. I am leaving Sunday for N.Y. and Rhode Island and Key West, Florida. An eclectic trip geographically but what does it spell. I`ll tell ya what it spells. N.Y. = Katzs Deli and melt-in-your mouth Pastrami on rye. Rhode Island = “Evelyn`s” in Little Compton for Buttery Lobster rolls and “Flo`s” in Newport for unbelievable fried clams. And Key West = Conch fritters and key lime pie. That’s been on my mind daily and I am definitely worried about giving into temptations. I am allowed cheat days once every week to week and a half but this could be dangerous. So far when I go out to eat now at home I can resist eating bad and can actually pick out or ask for Paleo food stuff on the menu. But now I will be out carousing late night places and might fall into the eating oblivion. But I think I can get through it if I plan it out. By that I mean have only one lobster roll, one time only. Eat only a 1/2 order of fried clams. Split a pastrami sandwich one time only and maybe skip the conch fritters and only have a taste of key lime pie. It will truly be a test of my will power and commitment to this lifestyle. I will keep blogging on the road and keep you posted how it goes. One trick I use is to think of all the work I’ve done and the success I’ve attained and how good I feel and look and ask myself when confronted with temptation “do I really want to blow this?” So we will see my friends.
